Ingredients

Scale

Main Ingredients

  • 200 grams rice noodles
  • 2 tablespoons oil
  • 1 tablespoon garlic, minced
  • 1 teaspoon ginger, minced
  • ½ teaspoon salt

Peanut Sauce

  • ¼ cup natural peanut butter
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon soy sauce (light)
  • 2 teaspoons dark soy sauce
  • 1.5 tablespoons brown sugar
  • ½ tablespoon rice wine vinegar
  • ¼ cup warm water

Garnishes

  • ⅓ cup roasted salted peanuts, roughly crushed
  • ⅓ cup green onion, chopped
  • Chili oil for topping (optional)

Instructions

  1. Prepare the peanut sauce: In a bowl, combine natural peanut butter, sriracha, light soy sauce, dark soy sauce, brown sugar, rice wine vinegar, and warm water. Mix thoroughly until the sauce is smooth and creamy.
  2. Cook the noodles: Follow the package instructions to cook the rice noodles until tender. Once cooked, drain and set aside to keep warm.
  3. Sauté aromatics: Heat oil in a skillet over low heat. Add minced garlic and ginger, sautéing gently for about 1 minute until the raw aroma dissipates without browning them.
  4. Toss noodles with sauce: Add the cooked noodles to the skillet, pour the prepared peanut sauce over them, and season with salt. Toss gently to coat the noodles evenly. If the noodles appear dry, add a couple of tablespoons of warm water to loosen the sauce and facilitate tossing.
  5. Serve and garnish: Transfer the noodles to serving plates. Top with roughly crushed roasted salted peanuts, chopped green onions, and drizzle with chili oil or extra sriracha if desired for additional heat.

Notes

  • Start with 1 tablespoon of sriracha and adjust up to 1.5 tablespoons based on your preferred spice level.
  • The peanut sauce should have a balanced flavor of nuttiness, spiciness, and sweetness for the best taste.
  • If noodles absorb too much sauce over time, add warm water to loosen it and make tossing easier.
  • Use natural peanut butter without added sugar or salt to maintain a clean, fresh flavor.
  • This dish can be served warm or at room temperature, making it versatile for different occasions.
