Ingredients

Scale

Sausage and Vegetables

  • 1 lb kielbasa sausage, sliced into 1/2-inch pieces (smoked Polish-style recommended)
  • 1 lb baby potatoes, halved or quartered into roughly 1-inch pieces
  • 1 head broccoli, cut into medium florets
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil (for tossing vegetables)

Honey Garlic Sauce

  • 1/4 cup honey
  • 3 cloves garlic, freshly minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting.
  2. Toss the kielbasa and vegetables: In a large bowl, mix the sliced kielbasa, baby potatoes, broccoli florets, red bell pepper, and red onion. Drizzle with 2 tablespoons of olive oil and toss thoroughly to ensure even coating. Spread everything out evenly on a large baking sheet in a single layer, taking care not to crowd the pan so that everything roasts rather than steams. Make sure potato pieces don’t exceed 1 inch for consistent cooking.
  3. Roast the ingredients: Place the baking sheet in the preheated oven and roast for 20 to 25 minutes, until the potatoes are fork-tender, the kielbasa edges have lightly browned, and the broccoli is tender with slightly crisp tips. If your potato pieces are larger, check for doneness at 20 minutes.
  4. Prepare the honey garlic sauce: While roasting, whisk together the honey, minced garlic, soy sauce, 1 tablespoon olive oil, dried oregano, black pepper, and salt in a small bowl until fully combined.
  5. Coat with sauce: Remove the baking sheet from the oven and drizzle the honey garlic sauce evenly over the skillet contents. Toss gently to coat all pieces well.
  6. Finish roasting: Return the baking sheet to the oven and roast for an additional 5 to 10 minutes until the sauce is bubbly and slightly caramelized. For extra caramelization, switch the oven to broil on high for the last 1 to 2 minutes, but watch carefully to prevent the garlic from burning.
  7. Serve: Remove from the oven and serve immediately. For added flavor and presentation, garnish with fresh parsley or sesame seeds if desired.
