Ingredients

Scale

Chicken and Bacon

  • 2 lbs Chicken Breast, cubed into bite-sized pieces (900g)
  • 8 slices Bacon, cooked crispy and crumbled (225g)
  • 2 tbsp Olive Oil for searing (30ml)

Sauce and Toppings

  • 10.5 oz Cream of Chicken Soup, 1 can (298g)
  • 1 cup Sour Cream (240ml)
  • 1 packet Ranch Seasoning Mix (28g)
  • 2 cups Sharp Cheddar Cheese, freshly shredded (200g)
  • 1/2 cup Green Onions, sliced (50g)

Instructions

  1. Fry Bacon: In a skillet over medium heat, fry the bacon slices until they reach a dark red-brown color and become crispy. Remove from skillet, crumble the bacon, and set aside for later use.
  2. Season and Sear Chicken: Season the cubed chicken breast pieces with salt and pepper. Heat olive oil in the same or a clean skillet over medium-high heat and sear the chicken pieces until they are golden brown on the outside. Transfer the seared chicken to a white ceramic baking dish.
  3. Prepare Creamy Sauce: In a bowl, whisk together the cream of chicken soup, sour cream, and ranch seasoning mix until a thick, pale-yellow sauce forms, ensuring ingredients are well combined and smooth.
  4. Assemble and Bake: Pour the creamy sauce mixture evenly over the seared chicken in the baking dish. Sprinkle the freshly shredded sharp cheddar cheese on top of the sauce-covered chicken. Place the dish in a preheated oven at 375°F (190°C) and bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden.
  5. Add Bacon and Green Onions: Once baked, remove the dish from the oven and immediately top with the crumbled crispy bacon and sliced fresh green onions for added crunch and flavor. Serve hot and enjoy your Mississippi Mud Chicken!

Notes

  • Use freshly shredded cheddar cheese for better melting and flavor compared to pre-shredded cheese.
  • Ensure chicken pieces are uniformly cubed for even cooking.
  • Bacon can be cooked ahead of time and refrigerated until ready to use.
  • This recipe pairs well with steamed vegetables or a simple green salad for a complete meal.
  • To reduce sodium, choose low-sodium cream of chicken soup and bacon if preferred.
