Sauce

  • 2 tsp Italian seasoning
  • 1 tsp red chili flakes
  • 1 tsp salt
  • ¼ tsp black pepper
  • 2 tbsp nutritional yeast
  • 2 tbsp tomato paste
  • ¾ cup vegetable broth
  • 1 cup coconut milk
  • ½ cup vegan cheese, shredded (optional)
  • 1 handful fresh basil

Instructions

  1. Cook Pasta: Boil the whole wheat linguine according to the package instructions. Before draining, be sure to reserve at least ½ cup of the pasta cooking water to use later for adjusting the sauce consistency.
  2. Sauté Onion: In a large pan, warm 1 to 2 tablespoons of olive oil or water over medium heat. Add the diced red onion and cook until translucent, about 2 minutes.
  3. Add Aromatics and Tomatoes: Stir in the minced garlic, Italian seasoning, red chili flakes, salt, black pepper, nutritional yeast, and tomato paste. Cook the mixture, stirring constantly, until fragrant, around 2 minutes. Then add the cherry tomatoes and vegetable broth, cover the pan, and let it cook for 3 minutes until the tomatoes burst and soften.
  4. Create the Creamy Sauce: Pour in the coconut milk and add the shredded vegan cheese if using. Stir continuously until the sauce turns creamy and well combined.
  5. Combine and Serve: Add the cooked linguine and fresh basil leaves to the pan. Toss everything together to evenly coat the pasta with the sauce. If the sauce is too thick, gradually add the reserved pasta water until you achieve the desired consistency. Serve immediately for the best flavor and texture.

  • You can omit olive oil and use water for a lower-fat version.
