Chicken Marinade / Wet Batter:
- 2 lb chicken breast, pounded to 1/2 inch thick, cut slider sized
- 2 cups buttermilk
- 2 eggs
- 1/2 cup pickle juice
- 1/4 cup hot sauce
Chicken Dry Batter:
- 300 g all purpose flour
- 150 g cornstarch
- 1 tsp baking powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp chipotle powder
- 1 tsp cayenne pepper
- 1 tbsp salt
- 1/2 tsp pepper
Honey Chipotle Sauce:
- 1 tbsp butter
- 1/4 cup chipotle adobo sauce
- 1/3 cup honey
- 1/4 cup ketchup
- 1 tbsp vinegar
- 1 tbsp Worcestershire sauce
Garlic Butter Slider Buns:
- 4 tbsp salted butter
- 1 tbsp finely chopped parsley
- 1 pack slider buns (about 8 buns)
For Assembly:
- Pickles (quantity to preference)
Homemade Chipotle Ranch:
- 1/2 cup mayonnaise
- 1 cup buttermilk
- 1 packet Hidden Valley Restaurant Style Ranch Packets (0.4 oz)
- 2 tsp chipotle powder
- Marinate the Chicken: Pound the chicken breasts to ½-inch thickness and cut them into slider-sized pieces. In a large bowl, whisk together the buttermilk, eggs, pickle juice, and hot sauce to create the marinade. Add the chicken pieces, cover, and refrigerate for at least 2 hours or preferably overnight to infuse flavor and tenderize.
- Prepare Chipotle Ranch: In a bowl, whisk together mayonnaise, buttermilk, ranch seasoning packet, and chipotle powder until smooth. Chill in the refrigerator while the chicken marinates to let flavors meld.
- Make Dry Batter: In a large bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, chili powder, chipotle powder, cayenne pepper, salt, and pepper. Mix thoroughly to ensure even seasoning distribution.
- Double Batter the Chicken: Remove chicken from marinade. Dip each piece into the dry batter lightly, then back into the wet marinade, and once more into the dry batter. Avoid packing the batter tightly; a light, slightly wet coating is desired with some wet spots visible for a crispy texture.
- Fry the Chicken: Heat oil in a deep fryer or heavy skillet to 350–365°F (175–185°C). Carefully add the dredged chicken pieces and do not disturb them for 2–3 minutes to let the crust set. Fry until golden brown and cooked through, then transfer to a wire rack to drain and rest. For extra crispiness, double-fry the chicken by briefly returning it to hot oil after resting.
- Prepare Honey Chipotle Sauce: In a saucepan, melt butter over medium heat. Add chipotle adobo sauce, honey, ketchup, vinegar, and Worcestershire sauce. Simmer gently until the sauce thickens slightly, stirring occasionally.
- Coat Chicken in Sauce: Toss the hot fried chicken pieces in the prepared honey chipotle sauce until they are well coated and flavorful.
- Prepare Garlic Butter Buns: Melt butter and stir in garlic powder and finely chopped parsley. Brush this garlic butter mixture generously onto the split slider buns. Place buns on a baking sheet and bake in a preheated oven at 350°F (175°C) for 5–10 minutes until golden. Optionally, broil for 1 minute to enhance color and crispness.
- Assemble Sliders: Spread a generous amount of chipotle ranch onto the bottom half of each bun. Add pickles on top of the ranch, then place one piece of the sauced chicken. Cap with the top bun and brush the tops with additional garlic butter for shine and flavor.
Notes
- Marinating the chicken overnight enhances flavor and tenderness.
- Double frying ensures an extra crispy crust on the chicken.
- Adjust chipotle powder and cayenne pepper amounts to control heat level.
- Use a thermometer to maintain oil temperature between 350–365°F for best frying results.
- Slider buns can be substituted with small sandwich rolls or mini brioche buns for variety.
- Homemade chipotle ranch can be made ahead and stored refrigerated for up to 3 days.
