  • 6 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups milk
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 ½ cups grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Prep the Chicken: In a large bowl, season the chicken thighs with paprika, onion powder, garlic powder, salt, and pepper. Drizzle with oil and toss until evenly coated. Let this sit while you prep the potatoes — even just 10 minutes allows the spices to soak in.
  2. Make the Creamy Garlic Sauce: In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant — about 1 minute. Whisk in the flour to make a roux, stirring constantly for another minute. Slowly pour in the milk, whisking to avoid lumps. Add garlic powder, onion powder, and salt. Let it simmer until slightly thickened, about 5 minutes. Stir in the Parmesan cheese and a handful of mozzarella. Turn off the heat once the sauce is smooth and creamy.
  3. Assemble the Dish: In a greased baking dish, layer the sliced Yukon gold potatoes. Pour the creamy garlic parmesan sauce evenly over the potatoes, making sure every slice is coated. Nestle the seasoned chicken thighs on top. Brush each piece generously with honey barbecue sauce.
