For the Potatoes
- 1 lb. Yukon Gold potatoes, diced into ½-inch cubes
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground pepper
- 1 tbsp olive oil
For the Steak
- 1½ lbs. sirloin steak, cut into 1-inch cubes
- 4 tbsp unsalted butter, divided
- freshly chopped parsley (optional, for garnish)
- Heat skillet and melt butter: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of unsalted butter. Allow the butter to melt completely, providing a flavorful base for the potatoes.
- Cook the potatoes and aromatics: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes without stirring for about 4 minutes to develop a golden crust, then stir and continue to cook for another 3-4 minutes until potatoes are fork tender. Once cooked, remove the potatoes from the skillet and set aside in a bowl.
- Sear the steak bites: Increase the stove heat to high and return the skillet to the burner. Add the remaining 2 tablespoons of butter and stir until melted. Place the cubed sirloin steak in a single layer in the skillet. Cook for 1 minute on the first side, then flip or stir and cook for another 1-2 minutes until the steak reaches desired doneness. Remove the skillet from heat.
- Toss steak and potatoes: Add the cooked potatoes back into the skillet with the steak bites. Toss together gently to combine and heat through. Adjust seasoning with additional salt and pepper if desired.
- Garnish and serve: Sprinkle freshly chopped parsley on top if using. Serve immediately and enjoy your flavorful garlic butter steak bites and potatoes.
Notes
- If potatoes are not tender after 8 minutes but are browning too quickly, reduce heat to medium-low, add 2 tablespoons of warm water, cover, and cook for 3-4 minutes until the water evaporates and potatoes are tender.
- Do not overcrowd the skillet while cooking steak or potatoes to ensure even searing and to prevent steaming.
- Use an instant-read thermometer to check steak doneness: rare (125-130°F), medium-rare (130-140°F), medium (140-150°F), medium-well (150-160°F), well-done (160-165°F).
- Yukon Gold potatoes are preferred for their creamy texture, but red-skinned or fingerling potatoes may also be used.
