For the Potatoes

  • 1 tbsp olive oil

For the Steak

  • lbs. sirloin steak, cut into 1-inch cubes
  • 4 tbsp unsalted butter, divided
  • freshly chopped parsley (optional, for garnish)

Instructions

  1. Heat skillet and melt butter: Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of unsalted butter. Allow the butter to melt completely, providing a flavorful base for the potatoes.
  2. Cook the potatoes and aromatics: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes without stirring for about 4 minutes to develop a golden crust, then stir and continue to cook for another 3-4 minutes until potatoes are fork tender. Once cooked, remove the potatoes from the skillet and set aside in a bowl.
  3. Sear the steak bites: Increase the stove heat to high and return the skillet to the burner. Add the remaining 2 tablespoons of butter and stir until melted. Place the cubed sirloin steak in a single layer in the skillet. Cook for 1 minute on the first side, then flip or stir and cook for another 1-2 minutes until the steak reaches desired doneness. Remove the skillet from heat.
  4. Toss steak and potatoes: Add the cooked potatoes back into the skillet with the steak bites. Toss together gently to combine and heat through. Adjust seasoning with additional salt and pepper if desired.
