For the Onions and Butter Mixture

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

For the Sliders

  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

For the Topping and Au Jus

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix
  • 1 packet au jus gravy mix
  • 3 cups water
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Caramelize the onions: In a large skillet over medium heat, melt the butter. Add the thinly sliced onions and coat them in the melted butter. Cook, stirring occasionally, for 12 to 15 minutes until the onions are soft and browned but not burnt.
  2. Season the onions: Stir in the minced fresh thyme, kosher salt, and black pepper. Mix thoroughly, then remove from heat and set aside.
  3. Prepare the rolls: Preheat the oven to 350°F (175°C). Take the rolls out of the package keeping them intact. Using a large knife, slice the rolls horizontally to separate the tops and bottoms. Place the bottoms, cut side up, into an 11×7-inch baking dish.
  4. Assemble the sliders: Layer half of the provolone cheese slices over the bottoms of the rolls. Add the sliced roast beef evenly on top, then spread the caramelized onions over the beef. Add the remaining provolone cheese slices atop the onions, then place the roll tops over the cheese to close the sliders.
  5. Prepare the butter topping: In a small bowl, combine the melted butter and dried onion soup mix. Brush or pour this mixture evenly over the tops of the rolls to ensure flavor distribution.
  6. Bake the sliders: Cover the baking dish loosely with foil, ensuring the foil does not touch the tops of the rolls. Bake for 25 minutes. Remove the foil and bake for an additional 5 minutes to brown the tops of the sliders.
  7. Make the au jus: While the sliders bake, prepare the au jus according to package directions using 3 cups of water. Once sliders are baked, garnish optionally with fresh chopped parsley and serve with the au jus on the side for dipping.

Notes

  • Dried herbs can be used instead of fresh; if using dried thyme, reduce the amount by half.
  • Any slider buns can be used, but sweet rolls provide the best flavor for this recipe.
  • Provolone and mozzarella are preferred cheeses, but feel free to substitute as desired.
  • The au jus dip is optional but adds a rich, flavorful element to the sliders.
  • These sliders can be frozen; to freeze, assemble and bake partially, then cool completely before freezing.
