  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

Butter Sauce & Au Jus

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix
  • 1 packet au jus gravy mix
  • 3 cups water
  • Fresh chopped parsley for garnish (optional)

Instructions

  1. Caramelize Onions: In a large skillet over medium heat, melt the butter. Add the sliced onions and coat them in the butter. Cook, stirring occasionally, for 12 to 15 minutes until the onions are soft and browned but not burnt.
  2. Season Onions: Add the minced thyme, kosher salt, and black pepper to the caramelized onions. Stir to combine, then remove the skillet from the heat and set aside.
  3. Prepare Rolls: Preheat your oven to 350°F (175°C). Take the sweet rolls out of the package without separating them. Slice across horizontally to separate the tops from the bottoms. Place the bottoms cut side up into an 11 by 7-inch baking dish.
  4. Assemble Sliders: Layer half of the provolone cheese over the roll bottoms, then add the sliced roast beef evenly on top. Spread the caramelized onions over the beef, then add the remaining cheese slices. Place the roll tops back on.
  5. Add Butter Mixture: In a small bowl, mix the melted butter and dried onion soup mix. Brush or pour this butter mixture evenly over the tops of the rolls for flavor and browning.
  6. Bake Sliders: Loosely cover the baking dish with foil, ensuring the foil doesn’t touch the rolls. Bake for 25 minutes. Then remove the foil and bake an additional 5 minutes to brown the tops of the rolls nicely.
  7. Prepare Au Jus: While the sliders bake, prepare the au jus gravy according to package instructions by mixing the au jus gravy mix with 3 cups of water. Heat until warmed through.
  8. Serve: Serve the sliders warm with optional chopped parsley garnish alongside small bowls of au jus for dipping.

Notes

  • Dried thyme can replace fresh thyme; use half the amount.
  • Any slider buns may be used, but sweet rolls add a wonderful flavor balance.
  • Provolone is preferred, but mozzarella can be substituted.
  • The au jus is optional but enhances flavor when used for dipping.
  • Sliders can be frozen after assembly; be sure to thaw before reheating.
