Ingredients

Scale

Main Ingredients

  • 1 can full-fat coconut milk (13.5 fl oz.)
  • ¼ cup low sodium chicken broth
  • 3 tablespoons red curry paste
  • 2 tablespoons peanut butter
  • 2 cloves garlic, grated
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1.5 tablespoons honey
  • ½ lime, juiced
  • 1 teaspoon sesame oil
  • 1 cup spinach, packed
  • 3 oz. mushrooms, sliced
  • 1820 frozen potstickers or gyozas

Garnish

  • Chopped green onions
  • Sesame seeds
  • Chili oil
  • White rice, for serving

Instructions

  1. Prepare the Sauce: In a 9×13-inch baking dish, whisk together the coconut milk, chicken broth, red curry paste, peanut butter, grated garlic, grated ginger, soy sauce, fish sauce, honey, lime juice, and sesame oil until the mixture is smooth and well combined.
  2. Add Vegetables: Stir in the spinach and sliced mushrooms, ensuring they are evenly coated with the sauce to incorporate their flavors and textures.
  3. Arrange Dumplings: Place the frozen potstickers or gyozas directly into the sauce in a single layer without overlapping. Spoon some of the sauce over the tops of the dumplings to keep them moist during baking.
  4. Bake: Cover the baking dish tightly with aluminum foil and bake at 375°F (190°C) for 27 to 32 minutes, until the dumplings are heated through and tender. Remove the foil during the last 5 minutes to allow the dumplings to crisp up on top.
  5. Garnish and Serve: Once out of the oven, sprinkle the dish with chopped green onions, sesame seeds, and drizzle chili oil over the top. Serve hot alongside steamed white rice for a complete meal.

Notes

  • Use frozen potstickers or gyozas directly from the freezer—no need to thaw before baking.
  • To make it vegetarian, substitute the chicken broth and fish sauce with vegetable broth and soy sauce respectively.
  • For extra spice, add more chili oil or serve with sliced fresh chilies.
  • Leftovers keep well in the refrigerator for up to 3 days and can be reheated in the oven.
  • Adjust the level of red curry paste according to your spice preference.
