Crust
Chocolate Ganache
- 6 oz. dark or semi sweet chocolate, chopped
- ½ cup (120 ml) heavy cream
Whipped Cream
- 2 cups (240 ml) cold heavy cream
- ¼ cup (60 g) powdered sugar

Chocolate Mousse
- ½ cup (120 ml) cold heavy cream
- 2 tablespoons Dutch process cocoa powder
- Crush Oreos: Place 16 Oreo cookies into a ziplock bag and crush them into small crumbs that are easy to scoop. Set aside for layering later.
- Make Chocolate Ganache: Combine chopped chocolate and ½ cup heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring between, until smooth and glossy like ganache, about 1-2 minutes total.
- Whip the Cream: In a mixing bowl, add remaining 2 cups heavy cream, powdered sugar, and vanilla extract. Whisk on low for 1 minute, then increase to medium speed and continue whipping 4-5 minutes until medium stiff peaks form. Scoop out half and set aside as whipped cream layer.
- Prepare Chocolate Mousse: With the mixer on low speed, add the cooled ganache and Dutch process cocoa powder to the remaining whipped cream. Mix gently until fully combined and glossy to create the chocolate mousse layer.
- Assemble Parfaits: In 4 (6 oz) or 6 (4 oz) glasses, layer 1 tablespoon crushed Oreos at the bottom. Add 1-2 tablespoons chocolate mousse, then 1-2 tablespoons whipped cream. Repeat the layering 1-2 times, finishing with crushed Oreos on top.
