- 1/2 cup Water (for ragi slurry)
- Heat Ghee and Toast Spices: In a pot, heat the ghee and add cumin seeds (jeera). When the cumin seeds begin to splutter, proceed to the next step.
- Add Vegetables and Water: Add chopped ginger, diced carrots, diced French green beans, salt, pepper, and 3.5 cups of water to the pot. Stir well.
- Simmer Vegetables: Bring the mixture to a boil, then reduce the heat to low and let it simmer for 10 minutes to soften the vegetables.
- Incorporate Mushrooms: Add the chopped mushrooms to the pot and let the soup simmer for an additional 2 to 3 minutes.
- Prepare Ragi Slurry: In a separate bowl, whisk together the ragi flour and half a cup of water until smooth and free of lumps to create the ragi slurry.
- Add Ragi Slurry to Soup: Gradually pour the ragi slurry into the simmering soup while stirring continuously to avoid lumps and ensure full incorporation.
- Thicken Soup: Continue stirring the soup until it thickens. Let it simmer for 4 to 5 more minutes.
- Serve: Turn off the heat and serve the Ragi Soup hot. Enjoy the comforting and nutritious meal.
