Ingredients

Scale

For the Chicken Cutlets:

  • 2 chicken breasts
  • 1 egg, whisked with a splash of milk
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup breadcrumbs
  • ½ cup panko
  • Vegetable oil for frying

For the Garlic Butter:

  • 4 tablespoons salted butter, slightly melted
  • 2 tablespoons mayonnaise
  • 23 cloves garlic, minced
  • 23 tablespoons chopped fresh parsley
  • ¼ cup finely grated Parmesan cheese

For the Caesar Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • ¼ cup finely grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, grated
  • Salt and pepper to taste

For Assembly:

  • 4 hoagies or baguettes
  • 34 cups romaine lettuce, chopped or shredded

Instructions

  1. Prepare the Chicken Cutlets: Slice the chicken breasts horizontally into 4 to 6 thin cutlets. In a small bowl, whisk together the egg, a splash of milk, garlic powder, salt, and pepper. In another bowl, combine the breadcrumbs and panko. Dip each chicken cutlet first into the egg mixture, then coat evenly with the breadcrumb mixture. Heat about an inch of vegetable oil in a shallow pan over medium-high heat and fry the cutlets for about 5 minutes each side until golden brown and crispy. Transfer to a paper towel-lined pan to drain excess oil.
  2. Make the Garlic Butter and Toast the Bread: In a small bowl, mix together the melted salted butter, mayonnaise, minced garlic, chopped parsley, and Parmesan cheese. Split the hoagies or baguettes lengthwise and spread the garlic butter mixture evenly on each half, on the inside. Place the bread halves on a baking sheet and toast in a preheated 450ºF oven or under the broiler for 3 to 4 minutes until golden and fragrant.
  3. Prepare the Caesar Dressing and Salad: In a bowl or mason jar, whisk together mayonnaise, sour cream or Greek yogurt, Parmesan cheese, lemon juice, Dijon mustard, anchovy paste, Worcestershire sauce, grated garlic, salt, and pepper. Toss 3 to 4 tablespoons of this dressing with the chopped romaine lettuce in a large salad bowl, coating it evenly.
  4. Assemble the Sandwiches: To build each sandwich, layer the crispy chicken cutlets on the toasted garlic bread, then add the dressed romaine lettuce salad. Finish with an extra sprinkle of finely grated Parmesan cheese on top. Serve immediately and enjoy the fresh, crunchy, and savory flavors!

Notes

  • You can substitute Greek yogurt for sour cream to lighten the dressing and add protein.
  • Use freshly grated Parmesan for the best flavor and texture.
  • For a spicier kick, add a pinch of cayenne pepper to the breadcrumb mixture.
  • Make sure the oil is hot enough before frying to achieve a crispy crust without absorbing excess oil.
  • If preferred, the chicken cutlets can be baked instead of fried for a healthier option.
