  • 1/2 cup chicken, sliced or shredded
  • 3/4 cup shredded mozzarella cheese
  • 3/4 cup shredded provolone cheese
  • 1 small Meyer lemon or regular lemon, thinly sliced
  • 1/2 cup fresh basil leaves

Instructions

  1. Make the Caesar Dressing: In a glass jar, combine the extra virgin olive oil, mayo, lemon juice, dijon mustard, Worcestershire sauce, grated garlic, and grated parmesan. Season the dressing with salt and pepper to taste, then close the jar and shake well until the dressing is smooth and emulsified.
  2. Toss the Salad: In a large bowl, toss the chopped romaine lettuce, seasoned croutons, and grated parmesan with the Caesar dressing until everything is evenly coated. Set aside.
