Lasagna Noodles

Alfredo Sauce
- 4 tablespoons butter
- 3 cloves garlic, minced
- 2 tablespoons all purpose flour
- 2 1/2 cups heavy cream

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/8 teaspoon nutmeg
- 1 1/2 cups Parmesan cheese, grated

Filling
- 2 cups cottage cheese
- 2 large eggs
- 2 cups mozzarella cheese, shredded and divided
- 3 cups rotisserie chicken, cut into bite-sized pieces
- Preheat and Prepare Baking Dish: Preheat your oven to 375 degrees Fahrenheit and spray a 9×13 inch baking dish with non-stick cooking spray to prevent sticking during baking.
- Cook Lasagna Noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook until al dente according to the package instructions. Drain the noodles and drizzle a little oil over them to prevent sticking. Spread them out flat on parchment paper to cool.

- Prepare Baking Dish: Spread 1 cup of the Alfredo sauce evenly across the bottom of the prepared baking dish to form a base layer.
- Mix Filling: In a large bowl, combine cottage cheese, eggs, 1 1/2 cups of shredded mozzarella, and rotisserie chicken pieces. Mix thoroughly until all ingredients are well incorporated.
- Roll Noodles with Filling: Lay a lasagna noodle flat on a cutting board. Spoon approximately 1/3 cup of the filling mixture down the center of the noodle. Carefully roll the noodle up and place it seam-side down into the baking dish. Repeat for all noodles and filling.
- Top with Sauce and Cheese: Pour the remaining Alfredo sauce over the rolled noodles, spreading it evenly. Sprinkle the remaining 1/2 cup of mozzarella cheese on top.
