Ingredients

Scale

Chicken and Broth

  • 2 lbs boneless, skinless chicken breasts
  • 2 cups chicken stock
  • 2 cups water
  • 1 tsp kosher salt

Slider Assembly

  • 3 cups Romaine lettuce, shredded
  • 18 slider buns, preferably brioche

Butter Mixture

  • 4 oz unsalted butter, melted (1 stick)
  • 1½ Tbsp light brown sugar
  • 1 tsp garlic salt
  • 1 tsp sweet paprika

Buffalo Sauce

  • 2 tsp white vinegar
  • ½ cup Franks RedHot Sauce
  • 2 Tbsp sriracha sauce
  • Salt and pepper to taste

Blue Cheese Spread

  • ½ cup crumbled blue cheese
  • ¼ cup creme fraiche
  • ⅓ cup mayonnaise
  • 2 Tbsp buttermilk

Instructions

  1. Cook Chicken: Place the chicken breasts, chicken stock, water, and kosher salt in a large covered saucepan and bring to a simmer. Reduce the heat to a bare simmer and cook until the chicken is fully cooked through, approximately 20 minutes.
  2. Shred Chicken: Remove the chicken from the broth to a plate and allow it to cool enough to handle. Then, pull the chicken apart finely using two forks or your hands to create tender shredded chicken.
  3. Prepare Buffalo Sauce: In a medium saucepan, whisk together the white vinegar, Franks RedHot Sauce, sriracha sauce, melted butter mixture (combine butter, light brown sugar, garlic salt, and sweet paprika), and salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 2-3 minutes. Set aside.
  4. Make Blue Cheese Spread: Whisk together crumbled blue cheese, creme fraiche, mayonnaise, and buttermilk in a bowl until smooth and creamy. Set aside.
  5. Combine Chicken and Sauce: Add the shredded chicken to the prepared Buffalo sauce. Cover and simmer over low heat for 20 minutes to let the flavors meld.
  6. Assemble Sliders: Split the slider buns. Pile each bottom bun with a generous amount of the Buffalo chicken, top with shredded romaine lettuce, and spread a dollop of the blue cheese mixture on the top bun. Close the slider and serve immediately.

Notes

  • For extra flavor, toast the slider buns lightly before assembling.
  • The Buffalo sauce can be adjusted in heat level by modifying the amount of sriracha or hot sauce used.
  • Blue cheese spread can be prepared a day ahead and refrigerated.
  • Ensure not to overcook the chicken to keep it moist and tender for shredding.
  • These sliders are best served fresh but can be stored covered in the refrigerator for up to 2 days.
