Ingredients

Scale

Crust

  • Dough for one large pizza

Toppings

  • 1 1/2 cups cooked chicken, shredded rotisserie or about 2 chicken breasts
  • 2 cups shredded mozzarella cheese
  • 1/2 cup barbecue sauce
  • 1/4 large red onion, very thinly sliced
  • Fresh cilantro, to taste

Instructions

  1. Preheat and prebake the crust: Preheat your oven to 450 degrees F (232 degrees C). Place your pizza dough on a baking sheet or pizza stone and prebake the crust for 6 minutes to ensure a crisp base.
  2. Apply the first layer of sauce and toppings: Spread a thin layer of barbecue sauce evenly over the pre-baked pizza crust. Then, sprinkle a thin layer of shredded mozzarella cheese on top, followed by the thinly sliced red onions.
  3. Prepare and add the chicken: Place the shredded rotisserie chicken in a bowl and toss it with a few tablespoons of barbecue sauce until well coated. Evenly distribute the barbecue chicken over the pizza surface on top of the cheese and onions.
  4. Add final toppings: Sprinkle another thin layer of shredded mozzarella cheese over the chicken. Finish by adding chopped fresh cilantro to taste for a fresh, vibrant flavor.
  5. Bake the pizza: Bake the assembled pizza in the oven at 450 degrees F for 10 to 15 minutes, or until the crust turns golden brown and the cheese is fully melted and bubbly. Remove from the oven, slice, and serve warm.

Notes

  • You can prepare the pizza up to one day in advance by rolling out and prebaking the dough, then layering the toppings. Cover well with plastic wrap and refrigerate until ready to bake.
  • Rotisserie chicken offers convenience, but you can substitute with grilled or baked chicken breasts shredded into pieces.
  • Adjust barbecue sauce amount to taste for desired tanginess and moisture.
  • Fresh cilantro can be omitted or replaced with parsley if preferred.
