Ingredients

Scale

Salmon

  • 1 ½ pounds salmon (four 6 ounce filets, skin on or off)
  • Salt and pepper to taste
  • 1 tablespoon extra virgin olive oil or avocado oil
  • Lime wedges (for serving)

Bang Bang Sauce

  • ¼ cup mayonnaise
  • 3 tablespoons sweet Thai chili sauce
  • 1 tablespoon fresh chives, finely chopped (can substitute green onions)
  • 2 teaspoons sriracha
  • Lime zest from ½ a lime

Instructions

  1. Make the Sauce: In a small bowl, combine the mayonnaise, sweet Thai chili sauce, finely chopped chives, sriracha, and lime zest. Season with salt and pepper to taste, then mix well. Refrigerate the sauce until ready to serve, allowing the flavors to meld.
  2. Prep the Salmon: Pat the salmon filets dry thoroughly with paper towels to ensure a good sear. Remove any pin bones with tweezers. Season both sides of the salmon with salt and pepper. Heat a skillet over medium-high heat and brush the salmon filets with your choice of olive or avocado oil.
  3. Sear the Salmon: Place the salmon skin side up in the hot skillet. Cook in batches if your pan is small to avoid overcrowding. Sear each side for about 1 to 3 minutes depending on thickness until the salmon reaches your preferred doneness. Aim for medium doneness, with the outer thirds opaque, center slightly translucent, and the exterior crisp and browned.
  4. Serve: Serve the salmon hot. Generously spoon the bang bang sauce over the top, garnish with extra chopped chives if desired, and add a squeeze of fresh lime juice from the wedges for bright citrus flavor.

Notes

  • When searing, avoid overcrowding the pan to ensure a crispy crust on the salmon.
  • For a milder sauce, reduce the sriracha amount to taste.
  • Using fresh lime zest and juice enhances the brightness of the sauce.
  • Salmon can be cooked skin-on or skin-off depending on personal preference.
  • Leftover bang bang sauce can be stored in the refrigerator for up to 3 days.
