A delicious and healthy baked salmon recipe topped with a creamy spinach and mozzarella blend. This dish combines tender seared salmon fillets with a flavorful sautéed spinach and onion mixture, finished with melted mozzarella cheese for a delightful, cheesy crust.

Ingredients

Scale

Salmon

  • 2 fillets fresh salmon
  • 1 tsp salt
  • 1 tsp pepper

Spinach Mixture

  • 1 cup spinach, thawed and drained
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 tbsp olive oil

Topping

  • 1 cup mozzarella, shredded

Instructions

  1. Preparation: Gather all ingredients and prepare the spinach by thawing and draining it completely. Slice the onion and mince the garlic.
  2. Sauté Onions and Garlic: Heat olive oil in a skillet over medium heat until shimmering. Add sliced onions and sauté for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant.
  3. Cook Spinach Mixture: Add the thawed and drained spinach to the skillet. Stir gently for 2-3 minutes until heated through and excess moisture evaporates. Season with salt and pepper, then stir in the sour cream to create a creamy mixture.
  4. Preheat Oven and Prepare Salmon: Preheat your oven to 175°C (347°F). Season the salmon fillets with salt and pepper. Sear each side of the salmon in a hot skillet for about 2 minutes to lock in flavor and texture.
  5. Assemble in Baking Dish: Grease a baking dish and place the seared salmon fillets skin-side down. Spread the creamy spinach mixture evenly over the top of the salmon. Sprinkle shredded mozzarella cheese generously over the spinach layer.
  6. Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, until the salmon is opaque and flakes easily with a fork, and the mozzarella has melted, turning golden and bubbly.
  7. Rest and Serve: Remove from the oven and let the salmon rest for a couple of minutes. Serve warm, optionally garnished with fresh lemon juice for an added burst of flavor.

Notes

  • Serve with a squeeze of fresh lemon for added brightness and flavor.
  • Ensure spinach is well drained to avoid a watery sauce.
  • Searing the salmon before baking helps keep the fillets juicy and adds a nice texture contrast.
  • Use fresh mozzarella for a creamier and less oily topping if preferred.
