Marinade and Steak

  • 1 cup chopped cilantro, plus more to serve
  • 7 garlic cloves, finely chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt

Instructions

  1. Prepare the Marinade: In a large shallow bowl or casserole dish, mix lime juice, orange juice, soy sauce, olive oil, chopped cilantro, garlic, chili powder, cumin, and salt. Stir well to combine the marinade thoroughly.
  2. Marinate the Steak: Place the flank steak into the marinade, turning it several times to coat evenly. Cover with plastic wrap and refrigerate for at least 6 hours, preferably overnight, flipping the steak once during the marinating period to ensure full flavor penetration.
  3. Preheat the Grill: Heat your grill to medium-high heat to ensure a perfect sear and grill marks on the steak.
  4. Grill the Steak: Remove the flank steak from the marinade and place it on the hot grill. Cook for 3-5 minutes per side, flipping once, until the steak reaches the desired doneness: 145˚F for medium-rare or 160˚F for medium.
