For the Sauce
- ½ cup honey
- ½ cup low-sodium soy sauce
- ¼ cup dark brown sugar
- 3 tablespoons hoisin sauce
- 3 tablespoons finely grated fresh ginger
- 6 medium cloves garlic, finely minced
For the Rub
- 1 tablespoon brown sugar
- 1 teaspoon garlic salt
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
For the Chicken
- 1½ pounds boneless skinless chicken breasts (about 4 medium breasts)
- 1 tablespoon extra virgin olive oil
- 1 tablespoon butter
For Serving
- Sliced baby cucumbers, if desired
- Sliced mini bell peppers, if desired
- Prepare the sauce: Combine all the sauce ingredients—honey, soy sauce, dark brown sugar, hoisin sauce, grated fresh ginger, and minced garlic—in a medium bowl. Stir well to combine; it’s okay if the mixture is slightly lumpy at this stage. Set aside.
- Mix the rub: In a small bowl, combine brown sugar, garlic salt, ground coriander, and smoked paprika. Stir well and set aside.
- Season the chicken: Place the chicken breasts on a large plate. Sprinkle the spice rub evenly over both sides of each chicken breast, ensuring a thorough coating.
- Sauté the chicken: Heat a large sauté pan over medium heat. Add the olive oil and butter, swirling the pan to coat as the butter melts and becomes hot and bubbly. Place the chicken breasts smooth side down into the pan; you should hear a sizzle. Cook for 4-5 minutes without moving them until the underside is golden brown. Flip the chicken and cook for an additional 1 minute. Note that the chicken won’t be fully cooked at this point as it will finish cooking in the sauce. Remove the chicken from the pan and place it on a clean plate.
- Cook the sauce and finish chicken: Pour the prepared sauce into the same pan and bring it to a boil over medium heat. Let it cook uncovered for 3-4 minutes until it starts to thicken. Return the chicken to the pan, cover, then turn off the heat. Let it sit covered for 10 minutes. If your chicken breasts are large, either slice them horizontally before cooking or let them cook in the boiling sauce for 1 minute before covering and turning off the heat.
- Serve: Plate the chicken with jasmine rice alongside sliced baby cucumbers and mini bell peppers. Optionally garnish with sesame seeds for added texture and flavor.
Notes
- To ensure even cooking, consider slicing large chicken breasts horizontally before cooking.
- Allowing the chicken to rest covered in the sauce off heat helps it finish cooking gently and absorb flavors.
- For a complete meal, serve this dish with steamed jasmine rice and fresh vegetable slices like cucumbers and mini bell peppers.
- Use low-sodium soy sauce to control salt content and keep flavors balanced.
- Garnish with toasted sesame seeds if desired to add a nutty crunch.
- If you prefer a thicker sauce, simmer it a little longer before adding the chicken back in.
