Instructions

  1. Preheat the oven. Set the oven to 375 degrees Fahrenheit to get it ready for roasting the onion evenly and thoroughly.
  2. Season the onion. Using a small melon baller, scoop out the top center portion of the onion about a third of the way down to create a well. Place the onion on a sheet of aluminum foil and add vegan butter into the hollowed center. Mix the cajun seasoning, olive oil, and salt (along with optional garlic powder and old bay seasoning if using) and pour this mixture over the butter into the well, letting it drizzle down the sides of the onion.
  3. Wrap the onion in foil. Seal the onion tightly wrapped in aluminum foil and place it in a baking dish or cast iron skillet to catch any drips during roasting.
  4. Roast the onion. Place the wrapped onion on the center rack and roast for 1 hour until the onion is fork-tender, slightly caramelized, and the center jiggles when gently shaken. If not done, reseal and roast for an additional 10 minutes as needed.
  5. Optional broiling for caramelization. For a deeper golden crust, open the foil, drizzle additional melted butter or olive oil and a pinch of salt, then broil on high for 5–10 minutes. Watch carefully to prevent burning.
