Instructions

  1. Prepare the beef mixture: In a large skillet over medium heat, cook the 1 pound of lean ground beef until fully browned, breaking it apart as it cooks. Add the diced yellow onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  2. Season the beef: Stir in the packet of taco seasoning and mix thoroughly, making sure the beef is evenly coated. Cook for an additional 2 minutes to allow the flavors to develop.
  3. Add vegetables: Mix in the frozen corn, petite diced tomatoes with green chilies (including the liquid), and optional black beans. Stir well and allow the mixture to simmer until heated through, about 5 minutes.
  4. Incorporate sour cream: Remove the skillet from heat and stir in the 1 cup sour cream to create a creamy mixture. Ensure it’s evenly combined.
