Wonton Cups

  • 24 wonton wrappers

Filling

  • ½ pound lean ground beef
  • 3 tablespoons water
  • 1½ tablespoons mild taco seasoning

  • 1 cup shredded fiesta blend cheese
  • 1 cup shredded lettuce
  • ½ cup guacamole
  • ½ cup sour cream
  • ½ cup pico de gallo

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat the oven to 375°F and lightly spray a regular-size muffin tin with non-stick cooking spray to prevent sticking.
  2. Form Wonton Cups: Press one wonton wrapper into each muffin tin opening, then overlay a second wrapper on top, pressing both firmly against the walls and bottom of each cup. Repeat for all muffin cups.
  3. Bake Wonton Cups: Bake the wonton wrappers for 8-10 minutes until they turn golden brown, with the tips possibly becoming a deeper golden color.
  4. Cook Ground Beef: While the wontons bake, heat a 1½ to 2-quart saucepan over medium-high heat, add the ground beef and continuously stir, breaking it into small pieces until fully cooked and no longer pink.
  5. Season Meat: Reduce heat to low, stir in the taco seasoning and water, and let the meat simmer for a few minutes before removing from heat.
  6. Assemble Taco Bites – Meat Layer: Spoon 1 tablespoon of the seasoned taco meat into each baked wonton cup.
  7. Add Cheese: Sprinkle 1 tablespoon of shredded fiesta blend cheese over the taco meat in each cup.
  8. Add Lettuce: Top the cheese with ½ to 1 tablespoon of shredded lettuce for a fresh crunch.
  9. Add Guacamole: Spoon 1 to 1½ teaspoons of guacamole over the lettuce layer.
  10. Add Sour Cream: Place a 1 teaspoon dollop of sour cream in the center of the guacamole on each bite.
  11. Add Pico de Gallo and Serve: Finally, spoon 1 to 2 teaspoons of pico de gallo over the sour cream and serve the taco bites immediately.
