Ingredients

Scale

Chocolate Mixture

  • 4 1/2 oz (125 g) 80%+ dark chocolate, chopped (adjust coconut sugar if using lower cocoa solids)
  • 1/4 cup (50 g) coconut oil, softened at room temperature (not melted)

Wet Ingredients

  • 3 medium eggs, room temperature
  • 3/41 1/4 cups (100175 g) coconut sugar (less if using lower cocoa solids chocolate)

Dry Ingredients

  • 1 cup (90 g) almond flour
  • 1/4 cup (30 g) cocoa powder
  • pinch of salt

Optional Add-ins

  • 1/21 cup dark chocolate chunks and chips

Instructions

  1. Preheat Oven: Preheat the oven to 355 ºF (180 ºC) and line an 8×8 inch (20×20 cm) baking pan with greaseproof or baking paper to ensure easy removal of the brownies.
  2. Melt Chocolate and Coconut Oil: In a heat-proof bowl set over a pot of simmering water, melt the chopped dark chocolate and softened coconut oil together until smooth. Remove from heat and set aside to cool slightly.
  3. Whisk Eggs and Coconut Sugar: Using a stand mixer with a whisk attachment or a hand mixer, whisk the eggs and coconut sugar on high speed until the mixture is pale, fluffy, and has tripled in volume. This process takes about 5 to 7 minutes and incorporates necessary air for texture.
  4. Incorporate Melted Chocolate: Slowly drizzle the melted chocolate mixture into the whipped eggs and sugar while mixing on low speed, ensuring it fully incorporates without deflating the batter.
  5. Add Dry Ingredients: Sift the almond flour, cocoa powder, and pinch of salt together, then gently fold them into the wet chocolate-egg mixture using a spatula. Continue folding until the batter is smooth and uniform without clumps.
  6. Mix in Chocolate Chunks: Stir most of the dark chocolate chunks and chips into the batter, reserving some for topping. Transfer the batter evenly into the prepared baking pan and smooth the surface. Sprinkle the remaining chocolate chunks on top for extra texture and flavor.
  7. Bake the Brownies: Bake in the preheated oven for 18 to 20 minutes. To check doneness, insert a toothpick in the center; for fudgy brownies, it should come out with moist crumbs attached, or for gooey brownies, with some half-baked batter still clinging.
  8. Cool and Serve: Serve the brownies warm for a gooey experience or allow them to cool completely for cleaner slices. They can be stored in a closed container at room temperature for 3 to 4 days.

Notes

  • Adjust coconut sugar depending on the cocoa content of your chocolate: higher cocoa solids need less sugar.
  • Ensure eggs are at room temperature for better volume when whisking.
  • Use greaseproof paper to prevent sticking and allow easy removal from the pan.
  • Don’t overbake to keep the brownies fudgy; check for moist crumbs on the toothpick.
  • These brownies keep well stored in a cool, dry place inside an airtight container for up to 4 days.
  • Optional chocolate chunks add extra decadence but can be omitted for simplicity.
