Ingredients

Scale

For the Mushrooms

  • 20 large white mushrooms (or cremini mushrooms)
  • 1 tablespoon olive oil

For the Filling

  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 4 ounces cream cheese (softened)
  • ½ cup sour cream
  • ½ cup Parmesan cheese (grated)
  • 1 cup chopped fresh spinach (or ½ cup frozen spinach, thawed and squeezed dry)
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder

For Topping and Garnish

  • ½ cup mozzarella cheese (shredded, for topping)
  • fresh parsley (for garnish)

Instructions

  1. Prepare the Mushrooms: Clean the mushrooms by wiping them with a damp cloth or paper towel. Carefully remove the stems and set aside the caps for stuffing. Lightly brush or toss the mushroom caps with olive oil for flavor and moisture.
  2. Cook the Filling Base: In a skillet over medium heat, sauté the finely chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Mix the Filling: In a mixing bowl, combine the softened cream cheese, sour cream, grated Parmesan cheese, sautéed onion and garlic, chopped spinach, salt, black pepper, onion powder, and garlic powder. Mix thoroughly until smooth and well incorporated.
  4. Stuff the Mushrooms: Using a spoon, fill each mushroom cap generously with the spinach dip mixture, pressing to fill any gaps.
  5. Add Topping: Sprinkle shredded mozzarella cheese evenly over the filled mushrooms for a melted cheesy topping when baked.
  6. Bake the Mushrooms: Preheat the oven to 375°F (190°C). Arrange the stuffed mushrooms on a baking sheet and bake for 20-25 minutes, or until the mushrooms are tender and the cheese on top is melted and golden.
  7. Garnish and Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley before serving warm as an appetizer or side dish.

Notes

  • For best texture, use fresh mushrooms and avoid washing them directly under water to prevent sogginess.
  • If using frozen spinach, ensure it is fully thawed and squeezed dry to prevent excess moisture in the filling.
  • You can substitute mozzarella with another melting cheese like Monterey Jack or cheddar for varied flavors.
  • To make it vegetarian, ensure the cheeses used are free from animal rennet.
  • These stuffed mushrooms can be prepared ahead of time and baked just before serving.
