Instructions

  1. Prepare the vegetables: Start by washing and chopping all the vegetables as directed: dice the eggplant, slice the zucchinis, chop the bell pepper and onion, and mince the garlic cloves.
  2. Combine ingredients in slow cooker: Place the diced eggplant, sliced zucchinis, chopped bell pepper, onion, and minced garlic into the slow cooker. Add the canned diced tomatoes with their juice, olive oil, dried thyme, dried basil, salt, and pepper. Stir to combine all the ingredients evenly.
  3. Cook the ratatouille: Cover the slow cooker with the lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the vegetables are tender and the flavors meld together beautifully.
