Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless skinless chicken breasts
  • 1 (1-oz) package taco seasoning
  • 1 (10-oz) can Rotel diced tomatoes and green chilies (undrained)
  • 3/4 cup salsa con queso

Suggested Toppings

  • Shredded lettuce
  • Extra salsa con queso
  • Avocado, sliced
  • Fresh cilantro leaves

Serving

  • Tortillas or hard taco shells

Instructions

  1. Prepare Slow Cooker: Place the boneless skinless chicken breasts at the bottom of your slow cooker. Evenly sprinkle the taco seasoning over the chicken, then pour the undrained can of Rotel diced tomatoes and green chilies on top.
  2. Cook Chicken: Cover the slow cooker and cook on low heat for 4 to 5 hours, until the chicken is fully cooked and shreds easily, reaching an internal temperature of 165°F (74°C).
  3. Shred Chicken: Remove the chicken breasts from the slow cooker and shred them thoroughly using two forks. If there is excess liquid in the slow cooker, drain most of it off, reserving a little in case it’s needed for moisture.
  4. Mix with Queso: Return the shredded chicken to the slow cooker and gently stir in the salsa con queso until well combined and heated through.
  5. Assemble Tacos: Serve the queso chicken mixture in soft tortillas or hard taco shells. Top with shredded lettuce, extra queso, avocado slices, and fresh cilantro as desired.
  6. Enjoy: Drizzle additional salsa con queso on top if you like, then enjoy your flavorful slow cooker queso chicken tacos!

Notes

  • Use fresh cilantro and avocado for bright flavor and creamy texture.
  • If the chicken mixture seems dry after shredding, add some reserved cooking liquid to moisten it.
  • This recipe is easily doubled or halved to suit your crowd size.
  • For a spicier taco, add jalapeños or more diced green chilies.
  • Serve with lime wedges for an added fresh citrus twist.
