Ingredients

Scale

Chicken and Vegetables

  • 1 1/2 lbs boneless, skinless chicken breast, patted dry
  • 1 medium yellow onion, diced
  • 1 medium bell pepper (any color), diced
  • 3 cloves garlic, minced

Sauce

  • 15 oz can diced tomatoes (partially drained, preferably with basil, garlic, and oregano)
  • 10 oz can condensed cream of mushroom soup
  • 10 oz can condensed cream of chicken soup
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Pasta and Finishings

  • 8 oz dried spaghetti
  • 1 cup shredded white cheddar cheese
  • 1/4 cup heavy whipping cream
  • Chopped fresh parsley for garnish

Instructions

  1. Prepare Ingredients: Pat dry the chicken breasts and dice the onion and bell pepper. Mince the garlic cloves. Having all ingredients prepped will ensure smooth cooking in your slow cooker.
  2. Combine Ingredients in Slow Cooker: Place the chicken breasts at the bottom of the slow cooker. Add the diced onion, bell pepper, minced garlic, and the partially drained diced tomatoes on top. Then pour in the condensed cream of mushroom soup and cream of chicken soup.
  3. Add Seasonings: Sprinkle the dried oregano, dried basil, kosher salt, and black pepper evenly over the ingredients in the slow cooker to evenly distribute the flavors.
  4. Cook Chicken and Sauce: Cover the slow cooker and cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken is fully cooked and tender.
  5. Shred Chicken: Once the chicken is cooked, remove it from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to incorporate into the sauce.
  6. Cook Spaghetti: Break the dried spaghetti in half so it fits in the slow cooker, then add it directly to the slow cooker. Stir to coat the pasta in the sauce. Cover and cook on high for 20 to 30 minutes, stirring occasionally, until the spaghetti is tender.
  7. Add Cheese and Cream: Stir in the shredded white cheddar cheese and heavy whipping cream until the cheese melts and the sauce becomes creamy and rich.
  8. Garnish and Serve: Sprinkle chopped fresh parsley over the top for a fresh, vibrant finish. Serve hot and enjoy your hearty creamy chicken spaghetti.

Notes

  • Partially draining the diced tomatoes prevents excess liquid, helping to avoid a watery sauce.
  • Use chicken breasts for lean protein, but chicken thighs can be substituted for a juicier texture.
  • Breaking the spaghetti into smaller pieces helps it cook evenly in the slow cooker.
  • Stirring occasionally during the last cooking phase ensures pasta does not stick together.
  • Adjust seasoning after cooking as needed, adding extra salt or pepper to taste.
