Filling
- 1 lb lean ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
Enchiladas
- 8 flour or corn tortillas
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheddar or Monterey Jack cheese

- Prepare the filling: In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary. Add diced onion and minced garlic to the skillet and sauté until onions are translucent, approximately 3-4 minutes. Stir in cumin and chili powder, mixing well to coat the beef evenly with spices. Remove from heat.
- Assemble the enchiladas: Preheat your oven to 350°F (175°C). Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch baking dish to prevent sticking. Warm the tortillas slightly in the microwave or on a skillet to make them pliable. Spoon approximately 2-3 tablespoons of the beef mixture into the center of each tortilla. Roll each tortilla tightly and place seam side down in the baking dish. Repeat with remaining tortillas and filling.
