Vegetables and Aromatics

  • 1 onion, diced
  • 1 carrot, diced
  • 2 sticks celery, chopped
  • 1 red pepper, sliced
  • 2 garlic cloves, chopped

Proteins and Legumes

  • 1 pack Beyond Sausage
  • 1 x 400g can green lentils in water, drained and rinsed
  • 1 x 215g can chickpeas in water, drained and rinsed

Liquids and Seasonings

  • 2 tbsp vegetable oil
  • 150ml vegetable stock
  • 1 x 227g can chopped tomatoes
  • 3 tsp Cajun seasoning

Instructions

  1. Prepare the vegetables and sausage: Dice the onion and carrot, chop the celery, slice the red pepper, and chop the garlic cloves. Remove the Beyond Sausage from its packaging and cut into bite-sized pieces if desired.
  2. Sauté the aromatics and sausage: Heat the vegetable oil in a large pot or deep skillet over medium heat. Add the diced onion, carrot, celery, red pepper, and garlic to the oil and cook for about 5-7 minutes until softened and fragrant. Add the Beyond Sausage pieces and cook, stirring regularly, until they are browned on all sides, about 5 minutes.
  3. Add lentils, chickpeas, and seasonings: Stir in the drained green lentils and chickpeas. Sprinkle the Cajun seasoning evenly over the mixture, stirring to coat all ingredients with the spices.
  4. Pour liquids and simmer: Pour in the chopped tomatoes and vegetable stock, stirring to combine. Bring the mixture to a simmer, then reduce the heat to low. Cover the pot and let it cook gently for about 15-20 minutes to allow the flavors to meld and the vegetables to become tender.
  5. Adjust seasoning and serve: Taste the dish and adjust seasoning if needed, adding salt or extra Cajun spice to preference. Serve hot, either on its own as a one-pot meal or paired with rice or crusty bread for a complete dinner.

  • This recipe is plant-based and suitable for vegetarians.
  • You can substitute the Beyond Sausage with any other plant-based sausage or regular sausage if preferred.
