- 1 pound ground Italian sausage (mild or spicy, remove casings before cooking)
- 2 (10-ounce) packages frozen veggies (potatoes, red bell peppers, sweet corn, broccoli, carrots)
- 1–1/2 cups frozen kale
- 1 tablespoon minced garlic
- Freshly grated Parmesan cheese for serving

- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder

- Thaw the Veggies: Heat both packages of frozen veggies in the microwave for 2 minutes to partially thaw. Open the packages, chop any large broccoli or potato pieces into bite-sized chunks, and set aside.
- Brown the Sausage: Heat olive oil in a large cast-iron skillet over medium-high heat. Add the ground Italian sausage, sear it to develop color, then crumble and cook through. Season with salt and pepper to taste.
- Drain Excess Grease: Once the sausage is browned, carefully drain most of the grease from the pan, leaving about 1 tablespoon to keep the mixture flavorful.
- Cook the Veggies: Add the thawed frozen veggies to the pan with the sausage. Cook for 3 to 5 minutes, stirring occasionally, until the veggies are heated through and tender.
- Add Kale and Seasonings: Stir in the frozen kale, minced garlic, dried basil, thyme, oregano, paprika, onion powder, garlic powder, salt, and pepper. Cook for another 2 to 3 minutes until the garlic is fragrant and the kale is warmed through.
- Finish and Serve: Remove the skillet from heat. Serve the sausage and veggie mixture topped with freshly grated Parmesan cheese. Enjoy immediately!
