Base
- 1½ cups (225g) Medjool dates, pitted
- 1 cup (120g) pecans or walnuts
- ⅓ cup (30g) raw cacao powder
- 1 tsp vanilla extract
- Pinch of sea salt
- 2 tbsp chia seeds or flaxseed meal
Filling
- No-added-sugar berry jam (raspberry, blueberry, or mixed berry), as needed
Optional Topping
- 50g dark chocolate, melted
- Prepare the base mixture: In a food processor, combine the pitted Medjool dates and pecans or walnuts. Pulse until the mixture is finely chopped and begins to clump together.
- Add dry ingredients: Add the raw cacao powder, vanilla extract, sea salt, and chia seeds or flaxseed meal to the food processor. Blend until well combined and the mixture forms a sticky dough-like consistency.
- Form the brownie cups: Take small portions of the base mixture and press them firmly into the cups of a mini muffin tin or silicone mold, shaping them into small cup-like forms with a hollow center for the filling.
- Add berry jam filling: Spoon a small amount of no-added-sugar berry jam into the center of each brownie cup, filling the hollow created in the base.
- Melt dark chocolate (optional): Gently melt the 50g dark chocolate in a double boiler or microwave in short bursts, stirring often to prevent burning.
- Drizzle chocolate topping: Using a spoon or piping bag, drizzle the melted dark chocolate over the filled brownie cups for an elegant finish.
- Chill and set: Place the brownie cups in the refrigerator for at least 30 minutes to allow the base to firm up and chocolate to set.
- Serve: Once chilled, carefully remove the brownie cups from the mold and serve immediately or store in an airtight container in the fridge for up to 5 days.
Notes
- You can substitute pecans or walnuts with other nuts like almonds or cashews according to your preference.
- For a nut-free version, try using seed blends such as pumpkin or sunflower seeds.
- Chia seeds or flaxseed meal help bind the dough, but you can adjust the quantity to reach desired consistency.
- Make sure your dates are soft and moist for easier blending; soak them in warm water for 10 minutes if needed.
- The berry jam should be no-added-sugar to keep the recipe healthy, but you can make your own fresh jam if preferred.
- Store the brownie cups in the refrigerator to maintain freshness and texture.
- Perfect as a healthy snack or a guilt-free dessert option.
