Instructions

  1. Prepare the dough: Preheat your oven to 400°F (200°C). Lightly flour your surface and roll out the pizza dough to about 1/8 inch thickness. Cut the dough into circles large enough to fit into small ramekins or muffin tins with some overhang.
  2. Fill the pot pies: Place each dough circle into the ramekin or muffin cup, pressing down gently. Spoon about 2 tablespoons of marinara sauce into each dough base. Add a layer of shredded mozzarella cheese, then pepperoni slices or your chosen toppings. Sprinkle with Parmesan cheese, dried oregano, basil, garlic powder, and red pepper flakes if desired.
  3. Top the pies: Place another dough circle over the filling. Pinch the edges of the top and bottom dough circles to seal the pot pie firmly. Cut a small slit on the top of each pie to allow steam to escape.
  4. Brush and bake: Optionally brush the tops with olive oil for a golden finish. Bake the pot pies in the preheated oven for 15-20 minutes or until the crust is golden brown and bubbly.
