Pasta and Sauce

  • 500g / 1 lb Minced/Ground Beef (12% fat recommended)
  • 2 tbsp Tomato Puree (Tomato Paste in US)
  • 600ml / 2 1/2 cups Beef Stock, warm (not boiling)
  • 500g / 2 cups Tomato Passata
  • 180ml / 3/4 cup Double/Heavy Cream, at room temperature
  • 1 tsp Worcestershire Sauce
  • 300g / 10.5 oz uncooked Conchiglie Pasta
  • Olive Oil, as needed
  • Fresh Parsley, finely diced, for serving (optional)

Instructions

  1. Prepare the Seasoning Mix: In a small bowl, combine salt, smoked paprika, dried oregano, black pepper, chili flakes, and dried thyme. Mix well and set aside.
  2. Sauté Onion and Garlic: Heat a drizzle of olive oil in a large pot over medium heat. Add the finely diced onion and sauté until translucent, about 3-4 minutes. Add the garlic and cook for another 1 minute until fragrant.
  3. Cook the Ground Beef: Add the minced beef to the pot. Break it up with a spoon and cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  4. Add Tomato Puree and Seasoning: Stir in the tomato puree and the prepared seasoning mix. Cook for 1-2 minutes to deepen the flavors.
  5. Add Liquids and Pasta: Pour in the warm beef stock and tomato passata. Stir well, then add the uncooked conchiglie pasta. Mix to combine.
  6. Simmer the Pasta: Bring the mixture to a gentle boil, then reduce the heat to low, cover, and let it simmer for about 12-15 minutes or until the pasta is tender and has absorbed most of the liquid. Stir occasionally to avoid sticking.
  7. Finish with Cream and Worcestershire Sauce: Once the pasta is cooked, stir in the heavy cream and Worcestershire sauce. Cook uncovered for another 2-3 minutes until the sauce is creamy and heated through.
  8. Adjust Seasoning and Serve: Taste and adjust salt and pepper if needed. Serve hot, garnished with chopped fresh parsley if desired.
