Beef Filling

  • 500g (1lb 2oz) lean beef mince (5% fat)
  • 2 tbsp fajita seasoning
  • 1 red pepper, seeds removed and thinly sliced
  • ½ red onion, finely chopped
  • pinch salt

Fresh Toppings

  • 1 tomato, finely chopped
  • 1 avocado, peeled, stone removed and finely chopped
  • small handful fresh coriander, finely chopped
  • ½ Little Gem lettuce, shredded
  • 12 limes, juice only

Additional Ingredients

  • 2 tbsp soured cream
  • 4 large flour tortilla wraps
  • 35g (1¼oz) cheddar, grated
  • 2 handfuls tortilla chips
  • hot sauce, to serve

Instructions

  1. Prepare the Beef Filling: Heat the olive oil in a large frying pan over medium-high heat. Add the lean beef mince and cook, breaking it up with a wooden spoon, until browned all over.
  2. Add the Seasoning and Vegetables: Stir in the fajita seasoning, red pepper, and red onion. Cook for 5-7 minutes until the vegetables have softened and the beef is fully cooked. Season with a pinch of salt to taste.
  3. Prepare Fresh Toppings: Meanwhile, finely chop the tomato, avocado, and fresh coriander. Shred the Little Gem lettuce. Squeeze the juice from the limes and set aside.
  4. Assemble the Burritos: Lay out the flour tortilla wraps on a clean surface or plate. Spread a spoonful of soured cream on each wrap, then layer with the cooked beef mixture, chopped tomato, avocado, coriander, shredded lettuce, grated cheddar, and a handful of crunchy tortilla chips.
  5. Finish and Serve: Drizzle lime juice over the filling and add hot sauce if desired. Roll up the burritos tightly to enclose the filling. Serve immediately while warm and enjoy your flavorful nacho beef burritos.
