A mouthwatering MEGA Chicken Pesto Grilled Cheese Sandwich that combines tender shredded chicken, fresh basil pesto, melty mozzarella, and flavorful sun-dried tomatoes. Perfectly toasted in buttered bread slices to golden perfection for a satisfying, savory meal.

Ingredients

Scale

Bread

  • 4 large thick slices of Bread (choose a sturdy, crusty bread like sourdough or ciabatta)

Filling

  • 1.5 cups / 150g / 5oz Shredded Cooked Chicken
  • 1/3 cup – 1/2 cup (80-120g) Basil Pesto (store-bought or homemade)
  • 5oz / 150g ball of Fresh Mozzarella, thinly sliced and patted dry
  • 8 Sun Dried Tomatoes, patted dry to remove excess oil

For Cooking

  • Butter, as needed for spreading on bread slices

Instructions

  1. Prepare the filling: In a medium bowl, combine the shredded cooked chicken with the basil pesto until the chicken is evenly coated. This will infuse the chicken with vibrant herbaceous flavor.
  2. Assemble the sandwich: Lay out the bread slices on a clean surface. Butter one side of each slice generously. On the unbuttered side of two slices, layer the pesto chicken mixture evenly, then add the thinly sliced fresh mozzarella, followed by the sun-dried tomatoes. Top with the remaining bread slices, buttered side facing out.
  3. Cook the sandwich: Heat a skillet or frying pan over medium heat. Place the sandwiches in the pan and grill for about 4-5 minutes on one side, or until the bread turns golden brown and crispy. Carefully flip and cook the other side for another 4-5 minutes, pressing gently to help meld the cheese and fillings together.
  4. Serve: Once both sides are golden and the mozzarella is melted, remove the sandwiches from the skillet. Let them rest for a minute before slicing in half to retain the filling. Serve warm and enjoy your mega chicken pesto grilled cheese!

Notes

  • Use thick slices of sturdy bread like sourdough or ciabatta for best results and to hold the fillings well.
  • Patting the mozzarella and sun-dried tomatoes dry helps prevent a soggy sandwich.
  • Adjust the amount of pesto depending on how intense you prefer the basil flavor.
  • Using cooked shredded chicken allows quick assembly, perfect for a hearty sandwich.
  • Butter the bread evenly and monitor cooking temperature to achieve a golden crust without burning.
