Crust
- 2 ⅓ cups (291 g) all-purpose flour
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) light brown sugar, firmly packed
- ¾ teaspoon salt
- ¼ teaspoon baking powder
- 12 Tablespoons unsalted butter, melted and cooled until no longer hot to the touch
Lemon Filling
- 1 14 oz (396 g) can sweetened condensed milk (do not use evaporated milk)
- 4 large egg yolks
- 2 Tablespoons heavy cream
- ⅛ teaspoon salt
- ⅔ cup (157 ml) fresh lemon juice
- Prepare the crust: In a large mixing bowl, combine the all-purpose flour, granulated sugar, light brown sugar, salt, and baking powder. Mix well until evenly distributed.
- Add butter: Pour in the melted and cooled unsalted butter, then mix thoroughly using a spatula or hands until the mixture becomes crumbly and holds together when pressed.
- Press crust: Reserve about 1 cup of the crumb mixture for the topping. Press the remaining crumbs firmly and evenly into the bottom of a greased 9×9 inch baking dish to form the crust layer.
