Lasagna Roll Ups

  • 9 dry lasagna noodles
  • 15 ounce (1 3/4 cups) part-skim ricotta cheese
  • 1 large egg
  • 10 ounce package frozen spinach, thawed and squeezed dry
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg

  • 3 cups homemade marinara sauce (or store-bought), divided
  • 1 cup shredded mozzarella, divided
  • 1/2 cup freshly grated Parmesan cheese
  • Extra virgin olive oil (for greasing the baking dish)

Instructions

  1. Preheat Oven and Prepare Noodles: Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to prevent sticking.
  2. Make the Filling: In a large bowl, combine the ricotta cheese, egg, thawed and squeezed spinach, minced garlic, dried Italian seasoning, salt, pepper, and ground nutmeg. Mix well until all ingredients are evenly incorporated.
  3. Assemble the Roll Ups: Spread a thin layer of the prepared filling evenly over each lasagna noodle. Sprinkle a small amount of shredded mozzarella over the filling. Carefully roll up each noodle tightly from one end to the other.
  4. Prepare the Baking Dish: Lightly grease a 9×13-inch baking dish with extra virgin olive oil. Spread 1 cup of marinara sauce evenly on the bottom of the dish to prevent sticking and add flavor.
  5. Arrange and Top: Place the lasagna roll ups seam side down in the baking dish. Pour the remaining 2 cups of marinara sauce over the roll ups to cover them. Sprinkle the remaining mozzarella and the grated Parmesan cheese evenly on top.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until the cheese is melted, bubbly, and slightly golden on top. Allow to cool for 5 minutes before serving.

Notes

  • For best results, use fresh homemade marinara sauce or a good-quality store-bought sauce.
  • Thaw the frozen spinach completely and squeeze out all excess moisture to avoid watery filling.
  • You can prepare the roll ups a day ahead, cover and refrigerate them before baking.
  • To make it vegetarian, ensure the marinara sauce and cheese do not contain animal-derived rennet.
