- 1 (19 oz) can white beans drained and rinsed
- 1 (14 oz) can diced tomatoes do not drain
- 2 teaspoons dried Italian herbs
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ¼ teaspoon red pepper flakes
- 5 and ½ cups water
- Cook the sausage: Place the sausage in a large skillet and heat over medium, stirring and crumbling until cooked through, about 5-10 minutes.
- Sauté the vegetables: If there is a lot of grease, drain most of it off, then add the diced onion and bell pepper to the skillet. Cook, stirring often, until the vegetables have softened, about 5 minutes.
- Add rice and liquids: Stir in the brown rice, drained white beans, undrained diced tomatoes, dried Italian herbs, garlic powder, sea salt, red pepper flakes, and water. Mix everything together until well combined.
- Simmer the mixture: Cover the skillet and allow the mixture to simmer gently for about 40 minutes, stirring occasionally, until the rice is nearly tender and most of the water has evaporated.
- Wilt the spinach: Stir in the fresh spinach a few handfuls at a time, allowing each batch to wilt before adding more. Cover and let the rice finish cooking until tender and the spinach is fully wilted.
