Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce, optional, adjust to taste
  • 1 teaspoon paprika, plus extra for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Add-ins

  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, finely chopped

Serving

  • Crackers, chips, or toasted bread slices

Instructions

  1. Boil the Eggs: Place the 8 large eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat, then reduce heat to low and simmer for 10 minutes. Remove eggs and place in ice water to cool, making peeling easier.
  2. Prepare the Egg Mixture: Once cooled, peel the eggs and chop them finely or mash them in a mixing bowl. Add 1 cup mayonnaise, 2 teaspoons Dijon mustard, 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt, and black pepper to taste. Stir well to combine all ingredients evenly.
  3. Add Heat and Flavor: Mix in 1 teaspoon of hot sauce if desired, adjusting to your preferred spice level. Add 1 cup shredded sharp cheddar cheese and 4 slices of cooked, crumbled bacon. Stir to incorporate the cheese and bacon throughout the mixture.
  4. Finish with Green Onions: Fold in 2 finely chopped green onions, reserving a few for garnish if desired. This adds freshness and a gentle onion flavor to the dip.
  5. Chill and Serve: Transfer the dip to a serving bowl, sprinkle extra paprika over the top for color, and chill in the refrigerator for at least 30 minutes to allow flavors to meld. Serve cold with crackers, chips, or toasted bread slices.

Notes

  • For easier peeling, cool boiled eggs immediately in ice water.
  • Adjust the hot sauce quantity based on your spice preference.
  • Substitute mayonnaise with Greek yogurt for a lighter version.
  • Prepare the dip a few hours ahead to enhance flavors.
  • This dip can be stored covered in the refrigerator for up to 3 days.
