Ingredients

Scale

Vegetables

  • 1 lb. carrots, washed & peeled (or unpeeled)

Glaze

  • 1 Tbsp avocado oil (or olive oil)
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • ¼ tsp salt
  • Cracked black pepper, to taste

Topping (Optional)

  • ¼ cup goat cheese, crumbled

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots, ensuring even cooking and caramelization.
  2. Prepare the carrots: Wash and peel the carrots if desired. You can use whole carrots or cut them into uniform sticks or halves for quicker roasting.
  3. Make the glaze: In a small bowl, whisk together the avocado oil, balsamic vinegar, honey, minced garlic, dried thyme, salt, and cracked black pepper until well combined.
  4. Coat the carrots: Place the carrots in a large mixing bowl and pour the glaze over them. Toss to evenly coat each carrot piece with the flavorful mixture.
  5. Arrange for roasting: Spread the glazed carrots in a single layer on a baking sheet lined with parchment paper or lightly greased, ensuring they have space to roast properly without steaming.
  6. Roast the carrots: Roast in the preheated oven for 25 to 30 minutes, flipping halfway through, until the carrots are tender and caramelized at the edges.
  7. Add finishing touches: Remove the carrots from the oven and, if desired, sprinkle crumbled goat cheese on top while they are still warm, allowing it to soften slightly.
  8. Serve: Transfer the roasted carrots to a serving dish and enjoy warm as a delicious and healthy side dish.

Notes

  • You can skip peeling the carrots if you prefer a more rustic texture and if they are cleaned well.
  • Adjust the amount of honey and balsamic vinegar to suit your sweetness or tang preferences.
  • For a vegan version, omit the goat cheese or substitute with a plant-based cheese.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated.
  • If you like a bit of heat, sprinkle some red pepper flakes into the glaze.
