Chicken Mixture

  • 1 ½ lbs raw boneless skinless chicken breasts
  • 2 large eggs
  • 1 tablespoon light mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh basil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried dill weed
  • ⅓ cup all-purpose flour
  • 4 oz shredded 2% milk Mozzarella cheese (about 1 cup)

For Cooking

  • 2 tablespoons olive oil

Instructions

  1. Prepare the chicken: Place the chicken breasts into the bowl of your food processor and cover with the lid. Pulse a few times or turn on for a few seconds until the chicken is finely diced. If you do not have a food processor, finely dice the chicken breasts by hand.
  2. Mix ingredients: Transfer the finely diced chicken to a large mixing bowl. Add the eggs, light mayonnaise, chopped parsley, chives, basil, salt, garlic powder, black pepper, dried dill weed, flour, and shredded mozzarella cheese. Stir everything together until well combined.
  3. Form fritters: Use a ¼ cup measuring cup to scoop out 15 equal portions of the chicken mixture and place them on a plate, ready to cook.
  4. Cook first batch: Heat 1 tablespoon of olive oil in a large sauté pan, skillet, or griddle over medium heat. Once hot, add half of the chicken piles to the pan. Press down on each pile with the back of a spoon or spatula to flatten into patties. Ensure they don’t touch or crowd the pan.
  5. Fry fritters: Cook the fritters for 3-4 minutes until the bottoms are golden brown. Flip and cook the other side for another 3-4 minutes until fully cooked through. Remove to a serving plate.
  6. Cook second batch: Add the remaining tablespoon of olive oil to the pan and cook the rest of the fritters in the same manner. The second batch may cook slightly faster. Remove cooked fritters to the serving plate.
  7. Serve: Serve the fritters warm as a delicious appetizer or main dish.
