Ingredients

Scale

Main Ingredients

  • 1 ½ pounds ground beef
  • 1 onion, minced
  • 4 carrots, minced
  • 3 celery ribs, thinly sliced
  • ½ cup barley
  • 3 (10 ounce) cans beef broth
  • 1 (28 ounce) can diced tomatoes
  • 2 cups water
  • 1 (10.5 ounce) can condensed tomato soup
  • 1 bay leaf
  • 1 tablespoon parsley
  • 1 teaspoon minced garlic
  • ½ teaspoon dried thyme
  • Ground black pepper, to taste

Instructions

  1. Prepare the vegetables: Mince the onion and carrots, and thinly slice the celery ribs to ensure they cook evenly and blend well in the soup.
  2. Brown the ground beef: In a large soup pot over medium heat, add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  3. Sauté aromatics and vegetables: Add the minced onion, minced carrots, sliced celery, and minced garlic to the pot with the browned beef. Cook for about 5 minutes until vegetables are softened and fragrant.
  4. Add liquids and seasonings: Pour in the three cans of beef broth, diced tomatoes with their juices, condensed tomato soup, and water. Stir in the barley, bay leaf, parsley, dried thyme, and season with ground black pepper to taste.
  5. Simmer the soup: Bring the mixture to a boil, then reduce heat to low and cover the pot. Let it simmer gently for about 1 hour, or until the barley and vegetables are tender and the flavors meld together well. Stir occasionally to prevent sticking.
  6. Final seasoning and serve: Remove the bay leaf. Taste the soup and adjust seasonings as necessary. Serve hot for a warm and filling meal.

Notes

  • Barley adds a hearty texture and fiber; rinse it before adding to the soup for the best result.
  • You can substitute ground turkey for a leaner alternative.
  • For thicker soup, reduce the water slightly or simmer uncovered for the last 10 minutes.
  • Leftovers freeze well for up to 3 months.
  • Add chopped potatoes or green beans for extra vegetables.
