Ingredients

Scale

Sausage

  • 4 chicken apple sausages

Vegetables

  • 1 pound sweet potatoes, peeled and cut into 1-inch cubes
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 to 2 shallots, thinly sliced

Seasoning and Oil

  • 3 tablespoons olive oil (or more as needed)
  • 1 teaspoon fresh rosemary (or 3/4 teaspoon dried rosemary)
  • 1 teaspoon garlic powder (optional)
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting the sausage and vegetables evenly.
  2. Prepare Vegetables: Peel and cube the sweet potatoes into 1-inch pieces. Trim and halve the Brussels sprouts. Thinly slice 1 to 2 shallots. Place all the vegetables onto a large sheet pan.
  3. Add Sausages and Seasonings: Arrange the chicken apple sausages on the sheet pan among the vegetables. Drizzle everything with olive oil and sprinkle with fresh rosemary, garlic powder if using, kosher salt, and black pepper. Toss the vegetables gently to coat all surfaces evenly with oil and seasonings.
  4. Roast on Sheet Pan: Place the sheet pan in the preheated oven and roast for about 25-30 minutes. Halfway through cooking, stir the vegetables and flip the sausages to ensure even browning and cooking.
  5. Check for Doneness: The sausages should be cooked through (internal temperature of 165°F or 74°C), and the vegetables should be tender and caramelized around the edges.
  6. Serve: Remove the sheet pan from the oven and let it cool slightly before serving. This hearty, flavorful dish is best enjoyed fresh and warm.

Notes

  • You can use dried rosemary if fresh is not available; just adjust the quantity accordingly.
  • Adjust olive oil quantity as needed to ensure vegetables don’t dry out during roasting.
  • For added flavor, consider adding a splash of balsamic vinegar or a sprinkle of parmesan cheese after roasting.
  • Leftovers can be refrigerated in an airtight container for up to 3 days and reheated in the oven or microwave.
  • Feel free to substitute chicken apple sausage with other sausage varieties of your choice.
