Custard

  • 4 tablespoons unsalted butter
  • 2 1/2 cups half and half

  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon freshly grated nutmeg

Instructions

  1. Prepare the croissants and ham: Preheat your oven to 350°F (175°C). Tear the croissants into bite-sized pieces and place them evenly in a greased baking dish. Distribute the sliced ham over the croissant pieces.
  2. Sauté the aromatics: In a skillet, melt the unsalted butter over medium heat. Add the diced yellow onion and cook until soft and translucent, about 5 minutes. Stir in the minced thyme and sage and cook for another minute until fragrant. Remove from heat.
  3. Make the custard mixture: In a large bowl, whisk together the eggs, half and half, Dijon mustard, whole grain mustard, kosher salt, black pepper, and freshly grated nutmeg until smooth.
  4. Assemble the bake: Spread the sautéed onion and herb mixture evenly over the ham and croissants in the baking dish. Sprinkle the shredded Gruyere cheese over the top. Pour the custard mixture evenly over everything, pressing down lightly to make sure all the croissant pieces absorb the custard.
  5. Bake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the custard is set, the top is golden and bubbly, and a knife inserted in the center comes out clean.
