Instructions

  1. Cook the ground beef: In a large skillet over medium-high heat, heat the 3 tablespoons of oil. Add the diced onion and minced garlic, cooking until fragrant and translucent, about 2-3 minutes. Add the lean ground beef and cook until browned and no longer pink, breaking it apart with a spatula.
  2. Add rice and liquids: Stir in the instant white rice, ½ cup water, and ½ cup chicken or beef broth. Mix well to combine all ingredients evenly in the skillet.
  3. Add enchilada sauce and beans: Pour in the 19 ounces of red enchilada sauce. Add the drained and rinsed black beans and pinto beans. Stir everything together until fully incorporated.
  4. Simmer the mixture: Reduce the heat to low, cover the skillet, and let the mixture simmer for 10-15 minutes or until the rice is tender and most of the liquid is absorbed.
  5. Add tortilla strips and cheese: Stir in the sliced flour tortillas strips evenly over the top of the mixture. Sprinkle the 1 cup shredded cheddar jack cheese on top.
  6. Melt the cheese: Cover the skillet again and continue to cook on low heat for an additional 5 minutes or until the cheese is melted and the tortilla strips soften slightly, creating a delicious burrito-style texture.
