Pizza Base and Toppings

  • 1 pre-made pizza crust (store-bought or homemade)
  • 1 cup fresh spinach, chopped
  • 1 medium head of garlic
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the medium head of garlic to expose the cloves. Drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30-35 minutes until soft and caramelized. Allow to cool, then squeeze out the roasted garlic cloves from the skin and mash.
  2. Prepare the Pizza Base: Place the pre-made pizza crust on a baking sheet or pizza stone. Brush the crust evenly with the remaining 1 tablespoon of olive oil to create a flavorful and crisp base.
  3. Assemble the Pizza: Spread the mashed roasted garlic evenly over the oiled crust. Distribute the chopped fresh spinach evenly on top of the roasted garlic layer. Next, dollop the ricotta cheese in small spoonfuls over the pizza, followed by sprinkling the shredded mozzarella, crumbled feta, and grated Parmesan cheese evenly across the surface.
  4. Season and Bake: Sprinkle 1 teaspoon dried oregano over the pizza, add crushed red pepper flakes if desired, and season with salt and freshly ground black pepper to taste. Bake the pizza in the preheated oven at 400°F (200°C) for approximately 12-15 minutes or until the cheese is melted, bubbly, and the crust is golden and crisp.
  5. Garnish and Serve: Remove pizza from the oven and garnish with fresh basil leaves. Allow to cool slightly, then slice and serve your flavorful Greek roasted garlic spinach white pizza warm.

Notes

  • For extra crispiness, pre-bake the crust for 5 minutes before adding toppings.
  • If you prefer a spicier pizza, increase the amount of crushed red pepper flakes.
  • Substitute spinach with kale or arugula for a twist on the flavors.
  • Roasted garlic can be prepared a day in advance and stored refrigerated.
  • Use fresh herbs if available for enhanced aroma and taste.
