Ingredients

Scale

Main Ingredients

  • ½ cup Parmesan cheese, finely grated
  • 3 Tablespoons butter, divided
  • 4 cloves fresh garlic, minced
  • 2 cups chicken broth
  • 1 cup milk
  • 8 oz. angel hair pasta
  • Fresh parsley, to garnish

Optional Seasonings

  • ¼ teaspoon onion powder
  • ¼ teaspoon oregano
  • ¼ teaspoon thyme
  • ¼ teaspoon parsley
  • ¼ teaspoon black pepper

Instructions

  1. Prepare Parmesan Cheese: Grate the Parmesan cheese finely and set it aside to reach room temperature, which helps it melt smoothly into the sauce later.
  2. Melt Butter and Sauté Garlic: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and cook for 1-2 minutes, stirring occasionally to release its aroma without burning.
  3. Add Broth and Seasonings: Pour in 2 cups of chicken broth along with the optional seasoning mix (onion powder, oregano, thyme, parsley, and black pepper). Slowly add 1 cup of milk while stirring to combine. Bring the mixture to a boil.
  4. Add Pasta: Add the angel hair pasta to the skillet. You can break the noodles in half if needed to fit better or use kitchen tongs to gently twist the noodles as they soften to fit into the skillet.
  5. Simmer Pasta: Let the pasta simmer for 4-5 minutes, stirring occasionally to prevent sticking. Keep an eye on the cooking time based on the package instructions to avoid overcooking, as angel hair pasta cooks quickly. Reduce the heat to low once pasta is nearly tender.
  6. Add Butter and Toss: Stir in the remaining 1 tablespoon of butter into the warm pasta, tossing to coat all noodles evenly with the buttery sauce.
  7. Add Parmesan Cheese: Gradually sprinkle the grated Parmesan cheese into the pasta, stirring continuously until the sauce is smooth and well-combined. The sauce might be thin initially but will thicken upon standing as the pasta absorbs more liquid.
  8. Garnish and Serve: Finish by sprinkling fresh parsley over the pasta for a fresh touch. Serve immediately, optionally with Garlic Bread with Cheese or your favorite sides.

Notes

  • Angel hair pasta cooks very quickly; monitor cooking time closely to prevent overcooking and clumping.
  • Let the Parmesan cheese come to room temperature before adding for a smoother melt.
  • This dish pairs well with Lemon Pepper Chicken, Creamy Garlic Shrimp, Chicken Piccata, Creamy Lemon Chicken, Chicken Florentine, Garlic Bread with Cheese, and Roasted Broccoli.
  • The sauce will thicken as it rests and the pasta absorbs more flavor.
