Chicken and Seasoning
- 2 lbs chicken tenders, thighs or breast, cut into 3” pieces
- 2 tbsp olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Garlic Parmesan Butter Sauce
- 1 stick butter (8 tablespoons)
- 8–10 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tbsp hot sauce (more if desired)
- 2 teaspoons red pepper flakes
- 1/3 cup fresh parsley, minced
- Soak Skewers: Soak wooden skewers in water for at least 30 minutes to prevent burning during cooking.
- Season Chicken: Combine paprika, garlic powder, onion powder, salt, and pepper in a small bowl. Toss the chicken pieces in olive oil, then coat evenly with the seasoning mixture.
- Assemble Skewers: Thread the seasoned chicken pieces tightly onto soaked skewers, snipping skewers if necessary to fit your air fryer.
- Prepare Sauce: In a microwave-safe bowl, melt butter with minced garlic partially. Whisk in red pepper flakes, hot sauce, parsley, and Parmesan cheese until combined and smooth. If sauce separates, add 1-2 tablespoons softened butter and stir to re-emulsify.
- Baste Partially Cooked Chicken: Reserve one-third of the sauce for basting the chicken while cooking and keep the rest for after cooking. Use separate brushes and wash between basting to avoid cross-contamination.
- Initial Cooking: Place 2-3 skewers in the air fryer at 400°F for 5 minutes.
- Flip and Baste: Remove skewers, flip them, and baste with reserved sauce. Return to air fryer for another 2 minutes at 400°F.
- Final Cooking: Flip skewers back, baste again with sauce, and cook for an additional 5-6 minutes or until internal temperature reaches 165°F. Total cook time will be approximately 12-14 minutes but may vary by air fryer.
- Serve: After cooking, brush skewers with the reserved clean garlic parmesan butter sauce, sprinkle extra Parmesan on top, and serve hot.
Notes
- Oven Preparation: Preheat oven to 450°F. Arrange skewers on a rimmed baking sheet lined with foil. Bake for 14 minutes, flipping and basting with butter sauce midway. Switch oven to broil and broil for 2 minutes until tops are golden. Remove and baste one last time with sauce, sprinkle with extra Parmesan.
- Grill Preparation: Preheat grill to medium-high heat. Grill skewers over direct heat for 5-6 minutes per side, basting continuously with butter sauce. Remove and baste a final time, then sprinkle with leftover Parmesan.
- Ensure skewers are tightly packed with chicken for maximum juiciness.
